Living in a motorhome puts severe limitations on storage and kitchen space. Therefore, I've had to scale down on the appliances I keep on board. Below are the appliances I use on a regular basis.
When you are only cooking for one, or two, there is no need to own a big, fancy, expensive food processor. This mini food procesor not only does what I need it to do, but it is also very inexpensive, well under $20.
My favorite indoor grill by Hamilton Beach® ... It has removable non-stick grids that are dishwasher safe and an auto shutoff timer. It's perfect for low fat cooking. There is no mess to clean up on the counter because the grease rolls downward into a pan that fits inside the unit. It also opens up as a double grill! Perfect for cooking for one person! Since newer models are now available, it is harder to find this model in the stores. However, you can purchase it directly from Hamilton Beach® , and the shipping charge is pretty reasonable.
I simply will not do without this wonderful appliance. I started out with their first model a few years ago, the Xpress 101, and fell in love with it. Their newer model, the RediSetGo, has removable dishwasher safe pans, an on/off switch, and a timer. This is the perfect appliance for the single cook.
You can purchase it directly from the manufacturer. I purchased mine from QVC® (search for Xpress or RediSetGo) as their price was more affordable,they offered additional pans at no extra cost & the shipping was less expensive.
When I first moved on board this bus and saw that I had a convection oven and not a regular old microwave, I got scared. I didn't know how to use this thing. But I learned quickly that this little time, space, and energy saver was going to be my best friend. While my regular oven remains a virgin, my convection oven gets quite a workout baking and roasting my favorite foods! It even grills!
